Choc Beanie Muffins

This has to be one of the easiest + nutrient rich + YUM recipes to date! It’s been created especially for the endo gal! It’s grain free, sugar free, dairy free and high in magnesium, iron, protein and fibre. The muffins are so satisfying and if you under-cook them just slightly, they have that gooey-dessert quality. Just writing this makes me want to go and grab another one to eat!

Here’s the low-down on how to make them:

Ingredients

400g tin organic kidney beans, drained and rinsed

80g organic cacao powder

140g granulated stevia or monk fruit

1 tsp baking powder (gluten free)

1/2 tsp bicarb soda

1/4 tsp sea salt

125g organic coconut oil or olive oil

5 eggs (organic, free-range)

1 tsp pure vanilla extract

You can also add a big handful of frozen organic blueberries after you blend the mixture if you like!

Method

1) Put all ingredients in a blender and blend till smooth.

2) Add frozen blueberries here if you added them in

3) Spoon into a muffin tray (using muffins cases helps them not to stick).

4) Bake in a pre-heated oven at 180 degrees Celsius for 15 mins (get out a little earlier if you want them a bit gooey)!

5) Allow them to cool and then eat! OH. YUM.

I sometimes serve them with coconut cream or yoghurt or Coco Tribe ice-cream!
