Uncontaminated Oatie Pancakes

I forgot I had this recipe and then I found it and made it this morning! Oh. My. Yum. High in protein and good fats and just a yummy start to the day! This recipe serves 2 so halve it if you just want to make it quickly for yourself.

1 cup uncontaminated/gluten-free oats

1 cup fruit (berries is best but you could also sneak a little bit of mashed banana in there!)

2 Tbsp plant-based milk of your choice (I used coconut)

4 organic, free-range eggs (you could use an egg replacement of a chia egg if eggs flare you or if you are vegan)

1 scoop (30-40g) dairy free or grass-fed whey protein powder or collagen powder (mine had a vanilla flavour)

Pinch of salt

Mix all together (I let mine sit in the fridge while I went for a run!)

Fry in a pan with grass-fed butter or coconut oil.

The recipe makes 4 bigger or 6 smaller pancakes.

I served mine with some extra grass-fed butter and a sprinkle of cinnamon! Sooo satisfying!

Let me know how yours turn out in the comments! I’d love to know!
